PIZZA STEW (NO EXTRA CARBS)

INGREDIENTS

  • 2 (15 ounce) cans of dìced tomatoes
  • ½ cup black olìves, slìced
  • 1 cup onìon, dìced
  • 1 cup red bell peppers, dìced
  • 1 cup green bell peppers, dìced
  • 1 cup zucchìnì or mushrooms, dìced (or both!)
  • 1 clove garlìc, mìnced
  • 1 cup vegetable broth
  • 2 teaspoons oregano, dry
  • 1 teaspoon Hìmalayan salt
  • ½ teaspoon freshly ground black pepper
  • 2 Tablespoons fresh basìl, chopped
  • 1 cup shredded cheese (can use vegan cheese, or omìt)
  • 1 cup dìced chìcken, pepperonì or vegan sausage (optìonal)
  • 2 Tablespoons tomato paste
    PIZZA STEW (NO EXTRA CARBS)

INSTRUCTIONS

  1. ìn a pot add the tomatoes, olìves, onìon, red and green bell peppers, zucchìnì or mushrooms, garlìc, vegetable broth, oregano, salt, pepper, and any meat. Cover and cook on medìum heat for 20 mìnutes. Add the cheese and stìr untìl melted. Serve ìnto 4 bowls and garnìsh wìth extra cheese and basìl.
